Vanilla Pumpkin Protein Muffins
Good luck finding a yummier, healthier, protein-packed fall snack. This is my current hyper fixation breakfast/snack/dessert. But their packed with the good stuff. So I am not mad about it.
Vanilla Pumpkin Protein Muffins
Yield: 12 Muffins
Time: 30 Minutes
Ingredients
1 Banana, Mashed
1 Cup Pumpkin Puree
1 1/2 Cups Egg whites
2 Cups Rolled Oats
2 Scoops Vanilla Protein Powder
2 tsp Cinnamon
1 tsp baking powder
1/2 tsp salt
2 tsp vanilla extract
Add-ins: 1 cup Blueberries, 1/2 Cup Chocolate Chips, 1/4 Cup Walnuts
Directions
Preheat oven to 375F.
Add mashed banana, pumpkin puree, egg whites and vanilla to a large bowl and mix together.
Add oats, protein, cinnamon, baking powder and salt to the bowl and combine wet and dry ingredients together.
Add you add-ins of choice to batter.
Spread muffin batter across 12 muffin moulds.
Bake in preheated oven for 25-28 minutes.
