Vanilla Pumpkin Protein Muffins

Good luck finding a yummier, healthier, protein-packed fall snack. This is my current hyper fixation breakfast/snack/dessert. But their packed with the good stuff. So I am not mad about it.

Vanilla Pumpkin Protein Muffins

Yield: 12 Muffins

Time: 30 Minutes

Ingredients

  • 1 Banana, Mashed

  • 1 Cup Pumpkin Puree

  • 1 1/2 Cups Egg whites

  • 2 Cups Rolled Oats

  • 2 Scoops Vanilla Protein Powder

  • 2 tsp Cinnamon

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 tsp vanilla extract

  • Add-ins: 1 cup Blueberries, 1/2 Cup Chocolate Chips, 1/4 Cup Walnuts

Directions

  1. Preheat oven to 375F.

  2. Add mashed banana, pumpkin puree, egg whites and vanilla to a large bowl and mix together.

  3. Add oats, protein, cinnamon, baking powder and salt to the bowl and combine wet and dry ingredients together.

  4. Add you add-ins of choice to batter.

  5. Spread muffin batter across 12 muffin moulds.

  6. Bake in preheated oven for 25-28 minutes.
